The restaurant was one of the first spots in the city to fully specialize in the famous Vietnamese noodle soup — and you can taste that focus from the very first spoonful. We visited the new Eppendorf location, which only opened at the beginning of 2026, and felt completely comfortable from the moment we walked in. A cozy atmosphere, genuinely warm service, and dishes that instantly show how much care and dedication goes into them.
Small, Focused, and Exactly Why it’s so Convincing
Many restaurants try to offer everything at once — Pho Dam does the exact opposite. The menu is pleasantly compact and focuses on a small selection of dishes that are truly well thought out. That’s exactly what makes the place so charming. Instead of trying to cover countless different cuisines, the focus here is on perfecting one specialty.
The concept is based on recipes from Northern Vietnam, which makes it stand out from many other Vietnamese restaurants in Hamburg. What we found especially interesting is that they intentionally avoid using hoisin or soy sauce. Instead, carefully selected spices are used to create flavors that are both deeply rich and perfectly balanced.
A Broth That Gets 24 Hours to Develop its Flavor
The classic pho broth is simmered here for a full 24 hours. You can genuinely taste that level of effort in every spoonful. The broth is rich, deeply aromatic, yet still wonderfully clean and balanced. Nothing feels artificial or overpowering — everything is perfectly harmonized.
We were especially impressed by the version with slowly braised beef brisket. The meat is cooked for several hours and turned out incredibly tender. You can immediately tell that everything here is made with patience and care rather than rushed mass production.
Vegans and vegetarians will also find plenty to enjoy here. Alongside the traditional bone-based broth, there’s a separate vegetable broth that’s just as rich and full of flavor.
Cleanliness That Instantly Stands out
One thing we absolutely have to mention is the hygiene. It’s rare to come across a restaurant that leaves such a spotless impression. We even got a glimpse into the kitchen and were genuinely impressed. Everything looked incredibly clean, organized, and professional.
Even the small details on the tables stood out to us. The jars filled with garlic, lime, and homemade sauces were absolutely spotless. It may sound like a small thing, but it really adds to the overall experience.

The menu focuses on a few carefully selected categories, each offered in different variations:

- Phở with different variations of meat, vegetables, or tofu
- Phở Trộn – rice noodles without broth, served with peanut sauce, salad, and your choice of meat or tofu
- Bún Nem – rice noodles with homemade spring rolls, fresh herbs, and sweet-and-sour fish sauce
- Cocktails and homemade drinks
Authentic, Satisfying, and Simply Incredibly Delicious
The combination of broth, rice noodles, fresh herbs, vegetables, and meat was a real highlight for us. Everything works together perfectly — nothing feels random or overdone. The noodles have just the right texture, the vegetables add freshness, and the broth ties everything together into a beautifully balanced dish. What really stays with you is the attention to detail. From the long cooking time of the broth to the careful presentation, you can tell that the people behind this place truly care about what they do. And that’s exactly what makes the food taste so special.
On top of that, the portions are generously sized and genuinely filling. Whether you go for a classic Phở, Phở Trộn, or Bún Nem, you’ll get honest, authentic food made with real quality.
A little tip: Pho Dam also serves “Quẩy” — a Vietnamese-style pastry traditionally dipped into pho. We had never tried it before, but instantly loved it. Slightly crispy on the outside, soft on the inside, and perfect for soaking up the flavorful broth — definitely something you should order on the side.

Pho Dam is a perfect example of how strong a restaurant can be when it focuses on one specialty and executes it with genuine passion. The new Eppendorf location stands out not only because of its cozy atmosphere and incredibly friendly service, but especially because of its deeply flavorful dishes and impressive commitment to quality. For us, Pho Dam is definitely one of the most exciting spots for authentic pho in Hamburg. A huge recommendation — and we’ll absolutely be back.
