In Short
“Mutterland Stammhaus” in Hamburg combines a restaurant, bakery, delicatessen store and a glass chocolate factory in an impressive old building. With a modern design in gray, black and petrol and an open kitchen, it offers a high-quality, regional and diverse menu. We particularly recommend miso croissant and grilled stulle. Despite small waiting times, a visit to the “Mutterland Stammhaus” is a great experience.
An Impressive Multiconcept
When you enter “Mutterland Stammhaus,” it quickly becomes clear that this is about more than just food. The restaurant, which is located in an imposing old building in the immediate vicinity of Hamburg’s main train station, combines a bakery, a restaurant, a delicatessen store and a glass chocolate factory on two floors.
Interior and Ambience: a Harmonious Interplay of Old and Modern
The design of the restaurant is simple and modern: Gray, black and petrol dominate, while the old building brings its own charm. Immediately eye-catching is the bakery to the left and the restaurant area to the right. For those who love the hustle and bustle of the city, there is outdoor seating. However, if you’re looking for a private spot, the elevations with single tables by the window are just right. We took advantage of that right away!
Gastronomic Diversity
The Mutterland Stammhaus places great value on quality. Here you will find no ready-made products, but only ingredients from regional, mostly organic origin. The open kitchen gives you a direct view of the culinary art. With the versatile menu, there is guaranteed to be something for everyone – whether vegan, vegetarian or meat lover.

Our Highlights
To drink, we ordered a green tea (4.20 €) and a freshly squeezed orange juice (4 €). The tea cup was very cute and had the Mutterland logo. There was a piece of brownie to go with the tea. I love to find such little surprises! The orange juice was fruity and fresh.
For brunch, we opted for:
- Miso Croissant – Double baked organic croissant filled with melted organic cheese, mushrooms and Black Forest Miso (10.90 €)
- Grilled Stulle – organic house bread, plus butter, lots of Backensholzer organic farm cheese and best organic ham – grilled crispy from both sides (11.90 €)
The wait of about 20 minutes was definitely worth it! The croissant was crispy and the combination of cheese, mushrooms and Black Forest Miso was a delight. The grilled Stulle convinced us, especially with its high-quality ingredients and balanced taste. We particularly enjoyed the cheese. This was strong, but has harmonized perfectly with the other ingredients.
Discoveries Above the First Floor
After brunch, our journey of discovery continued. On the upper floor, we were able to take a look at the chocolate creations through the glass fronts of the chocolate manufactory. Next door in the store, you will find a variety of organic products and homemade treats.
Tip: The products of the delicatessen are perfect as a souvenir from Hamburg or as a gift for Christmas, birthdays or other occasions!
Our Conclusion
Mutterland Stammhaus is more than just a restaurant. It is a culinary experience in the middle of Hamburg that you should not miss, despite small waiting times. If the quality of your food is important to you, then Mutterland is the place for you. We find the concept remarkable and will definitely come again!
