In Short
Anyone who thought truly great hand-pulled noodles were only to be found in Berlin will be pleasantly surprised in Hamburg. With Mr. Noodle Chen, a concept has arrived in the city that not only feels incredibly authentic, but is also genuinely fun — from ordering to the very last slurp. And yes, you can even get seconds here. Free. Unlimited.
Between Dough and Show: The Open Kitchen as a Stage
You notice it right away when you walk in: things work a little differently here. You order directly at the counter, get a number, and your food is brought to your table later. It sounds simple, but it keeps everything running smoothly and efficiently.
While waiting, we find ourselves lingering — because the open kitchen immediately draws your attention. The noodles aren’t just cooked here; they’re pulled, swung, and folded. It feels like a mix of craftsmanship and performance. You can tell right away: this is real skill.
Small and Well Thought Out
The space itself is modern, minimal, and free of unnecessary frills — perfectly in line with the concept. One detail in particular caught our eye, something we hadn’t seen before: each seat has its own small drawer with cutlery and napkins. It may sound simple, but it’s surprisingly charming and thoughtfully designed.
A Look at the Menu
The selection at Mr. Noodle Chen is concise — offering plenty of choice without feeling overwhelming. Naturally, the focus is on the hand-pulled noodles, which come in a variety of styles, from hearty to light, with both meat and vegetarian options.

On the menu, you’ll find, among other things:
- Biangbiang noodles with braised beef
- Noodles with tomato sauce and egg (brand new – a real highlight!)
- Noodles with sesame sauce and chicken
- Vegetarian noodle dishes
- Chinese-style burgers with beef
- Cucumber salad
- Spicy tofu
- Two dessert options
There’s also a selection of bottled drinks, especially Asian teas, which pair perfectly with the dishes.
Wide Noodles, Big Love
What impressed us right away: the noodles come in eight different widths. That alone shows how much emphasis is placed on individuality here. And then comes the best part — once you’ve finished your portion, you can get free refills. No joke. Especially when you’re really hungry (or just can’t get enough), it’s a real highlight.
In terms of flavor, the braised beef really stood out to us: melt-in-your-mouth tender, rich, and perfectly balanced with the sauce. The noodles themselves have just the right bite — you can immediately tell they’re not mass-produced. By the way, the restaurant is completely halal and does not serve pork.
The new dish — hand-pulled noodles with tomato sauce and egg — really impressed us! It was completely new to us, yet it’s actually a traditional dish in China. All the more reason we loved it — absolutely delicious and definitely something we’d order again.
The sides hold up just as well. The cucumber salad adds a refreshing touch without being too spicy or too sweet — just nicely balanced. The pickled vegetables bring plenty of flavor without overpowering everything else. And even the drinks, although “just” bottled, fit perfectly into the concept — especially the Asian teas, which are a great complement to the meal.
Final Verdict: A Place Worth Coming Back To
For us, Mr. Noodle Chen is already one of the most exciting noodle spots in Hamburg. Authentic, fast, and rooted in real craftsmanship — with a concept that’s simply fun. We can highly recommend it and are already looking forward to working our way through the different noodle dishes on our next visits.
